RAW: Lesson Four

Snacks and Light Meals

Raw Pizza Crust (or Raw Crackers)

4 onions (thinly sliced)
4 cups sunflower seeds (soaked overnight)
4 cups sunflower seed (hulled)
4 garlic cloves
1 tbs onion powder
1 tbs garlic powder
1 tbs
1 tbs black pepper
1-2 drops doTerra EO
2 cups chia seeds
4 cups water

-Mix everything well with hands
-Mould picture into circular pizza shape on texflex paper
-Use a pizza cutter to slice into pizza slices before dehydrating so that dried crust can easily be broken apart
-Dehydrate for 3 hours, flips, and dry for another 4 hours
-When crust is dehydrated, top with your choice of pizza sauce (try the raw sauce recipe from previous book) and your choice of toppings

 

Raw Lasagna

2 whole zucchini per person, soaked in garlic
1 tomato sliced
Use previous sauce recipe for tomato sauce
Use previous cashew cream recipe, or crumbled feta (but omit Greek spices)

For parmesan topping:

2 cups of cashews (dry)
1 tsp salt
1 tbs garlic powder
1 tbs nutritional yeast

Pulse in blender.
-Slice zucchinis with a mandolin slicer/veggie peeler to resemble a lasagna noodle.
-Layer noodle, then tomato, then sauce, then cream cheese (or modified feta), sprinkle parmesan, then place another noodle on top and repeat until desired height has been reached.

Turmeric Tea

4 cups boiling water
1 tbsp organic turmeric powder
Almond milk (optional- froth in a milk brother for a latte taste)
Stevia (New root brand is most flavourful, add to taste)
Optional: black pepper EO (increase absorption of turmeric),
cinnamon
-Boil water, add turmeric, pour frothed milk overtop, add stevia if desired.

 

 

Raw Tiramisu

Filling x2
4 cups cashews (soaked)
.5 cup yacon syrup or coconut nectar
1 tsp vanilla
1 tsp cinnamon
2 teeccino tea bags (vanilla), boil in water separately
.5 cup boiling water
1 tbs refined coconut oil

Cake Layer:

2 cups almond flour
2 cups coconut (hulled)
-Blend together
-Using a 10×10 spring form pan, pat down cake layer, Blend 1st batch of cream filling and pour onto cake layer.
-Freeze for 30 mins
-Pat down lightly another cake layer
-Pour second batch of filling
-Freeze for 6 hours, then pop out and sprinkle cacao on top with a fine strainer

Chocolate Sauce: .5 cup cacao

.5 cup nectar or yacon
.5 tsp coconut oil, melted
-Blend together and pour on top in pretty little lines.
